The Best Gnocchi Recipe I’ve Ever Had

The BEST Gnocchi Recipe

I’ll admit – I’m not a great cook.  That is why it blows my mind that this meal (that I cooked) is literally one of the best meals I’ve ever had – including cooked and restaurant meals.  That’s because it’s so easy and just that good.  My husband and I have been tweaking this recipe over the past few years and I think we’ve finally gotten it right.  So here it is from our house to yours:

Serves 2-3

You will need:

  • 1 package of potato gnocchi (can be found in the pasta section of most grocery stores)
  • 2 T sundried tomatoes (you will thank me for this)
  • 1 clove of garlic, chopped
  • Shredded parmesan cheese
  • 1 white onion, chopped
  • Couple handfuls of fresh spinach
  • 1 lb Italian sausage of your choice
  • 1 cup of tomato sauce of your choice

Instructions:

Sautee the onion, spinach and garlic on medium until tender/cooked.  Add tomato sauce and set aside.  Boil gnocchi as directed.  Meanwhile, cook sausage either in skillet, oven or grill and then chop into small pieces.  Top the gnocchi with the tomato sauce/vegetable mixture and sausage.  Then top with desired amount of parmesan.  Enjoy!
